Zoo Trip


The local zoo is free until the end of March, so we decided to go for a walk in the zoo, while looking at the animals. It was a beautiful day. I believe it got to 15.

Meatless Monday Mar 15

Meatless Monday already. I am finding that time just keeps going faster, and faster, or maybe it's just me.
This weeks Meatless Monday is
Vegetable-Rice Casserole
2 cups of frozen cauliflower, broccoli and carrots
1 can chickpeas
1 can cream of mushroom soup
1 cup instant brown rice
1 cup of cheese whiz
1 cup of water
1. combine frozen veggies and chickpeas in slow cooker. In a bowl combine soup, uncooked rice, cheese whiz, and water, pour over veggies and chickpeas.
2. cover slow cooker, cook on low for 4-5 hours. Stir well before serving.

Not only did this young man have to battle a terrible cold, and a horrible cough. But he also smacked his head on the bookcase(yep, the one behind him, with the toys in it, not books).

But no worries, he's still happy as a clam.

Shout Out!!!

Since I still can't get my photos to upload, thought I would do a shout out to a wonderful business in my area. SOBEYS, is not a small business, it's a big grocery store in Canada. Big like Safeway, Extra Foods, Loblaws. But every time I go to my local Sobeys, I feel like I am getting special service. They offer my babies free cookies(need something to distract them, while mom does the shopping). When Tim fell on the floor one of the produce people helped him up, asked him if he was OK. Even the boy who packs our bags at the checkout was wonderful, and friendly. I just think it's so rare to receive excellent customer service. So here's my Shoutout to the Sobeys in Preston Crossing. If you are in my area, please, stop by and check them out.

Meatless Monday Mar 8



Beans and Pasta (Family Circle Slow Cooker Meals)

With A Few Tweaks


1 can(19 oz) white kidney beans

1 can(28 oz) stewed tomatoes

1 medium-sized green bell pepper-seeded and chopped

1 medium-sized red bell pepper-seeded and chopped

1 medium size onion- cut into thin wedges

2 teaspoons Italian seasoning

1/2 teaspoon black pepper

4 cloves garlic-chopped

1 cup veggie broth

3/4 pound penne pasta

1/2 cup parmesan cheese


1. In 3-4 quart slow cooker, combine top 8 ingredients. Pour veggie broth on top.

2. Cook for 7-9 hours on low. 3-4 hours on high.

3. cook pasta to desired tenderness

4. Using slotted spoon, pour mixture over pasta, sprinkle with parmesan cheese.



5 hrs into cooking, and it smells so good. The problem with using the slow cooker, when I have no plans to go out for the day, is that it smells so darn tasty I just eat everything in the house.

Meatless Monday Mar 1

I almost forgot it was Monday today. What with trying to get back into the swing of being a mom again. The last couple of days have been hectic, so I hadn't stopped to plan my meatless meal for today. At the last minute I decided to throw together a Couscous Lemon Veggie dish. Just thought of it spur of the moment, so hopefully it works out.
Make couscous. I always make mine with veggie broth instead of water, this time I decided to add a squirt of lemon juice to it. LOL! So inspired.
Mix chic peas, carrots, onions in a separate saucepan with water. Bring to a boil, drain. Mix cooked couscous, and cooked veggies(chic peas).
I promise next week will be a little more planned. This was a very rushed, spur of the moment meatless dish.
