Wow! Can't believe how fast January flew by. Today's Meatless Monday is...
Bean, Cheese, Quesadillas.
Bean, Cheese, Quesadillas.
Oil(loves me some EVOO, but you can use whatever)
Whole Wheat Tortillas
cheddar cheese
black(or pinto)beans
salsa
guacamole(optional)
1.spread oil on one side of tortilla
2.lay tortilla, oil side down, on work surface(LOL, counter)
3.arrange the cheese on top, covering only half the tortilla
4. arrange the beans, tablespoons salsa on top of cheese
5. fold tortilla in half
6. cook in skillet over med heat, covered, about 4 minutes
7. flip, cook uncovered about 2 minutes
8. Cut in wedges, top with guacamole, and salsa
Sounds super yummy, hope it is.
I am loving meatless Monday. Experimenting with new recipes in one of my favorite things to do. It's nice to have an excuse to try meatless recipes.
LOST starts tomorrow. So Excited!

I move to often to have such things as toasters, skillets, pancake pans, but i always take a placa with me. It is ca ast iron pan just for tortillas. I put butter on it, cant wash it, and it makes the tortillas nice and crispy, restaurant style. My kids eat cheese or cheese and chicken quesadillas at least twice a week. Yummy yummy, now i might have to make some today, lol!
