Veggie Spaghetti
mushrooms
carrots
celery
broccoli cuts
black beans
broccoli cuts

spaghetti sauce
uncooked spaghetti noodles
Cook mushrooms in olive oil(EVOO), cook carrots, celery, broccoli, add jar of spaghetti sauce, and black beans(drained). Let simmer for 15 minutes
cook spaghetti noodles(I like mine Al Dente)
Pour cooked noodles on plate, pour sauce on top.
LOL! So easy, I felt silly writing out the recipe. Maybe this week the kids will actually eat some of my meatless Monday supper.

Looks good to me! Of course, any kind of pasta is usually a hit with me. And a hit with my hips.
